It's Been A Rough Few Weeks

It's been a rough few weeks in the England household!
Financial struggles have been piling up and putting a strain on David and myself, and we've been trying our best to make ends meet and come up with ways to save money and lower our monthly expenses...not an easy task!
Our A/C broke, so we've been without air for about two weeks..thankfully most days haven't been too hot, so we've had the windows open and we've managed to stay relatively cool, but it will need to be fixed soon before the cold comes and this is just another added expense that we don't need.
I also had another surgery which I won't go into detail about because only those near and dear to my heart are privilege to such information, but let's just say it wasn't a surgery that I would wish on my worst enemy, but it had to be done!
I've been trying to recover but find it very difficult to be the patient and not be in control of everything. Friends and family have been on me about not doing too much and just laying down and getting better, but I am hard headed when it comes to that and have been doing a little cleaning here and there because not cleaning drives me MAD!
Anyhow, I am recovering well and haven't had to use any pain meds in two days, so I hope to be back to 100% by next week!
In closing, I just want to thank all my friends for checking on me and helping me out during my recovery, it has meant the world to me!
I pray that things will start to look up for us and we can get back on our feet again soon!

Sunday~Mexican Chicken w/ rice and corn
Monday~Baked Ziti w/ garlic bread
Tuesday~Skillet Taco Supper w/ tortilla chips
Wednesday~Salisbury Steak w/mashes potatoes and veggies

Changing It Up

Those of you who know me well, know that I am not a great cook and don't really enjoy cooking, but we don't have tons of money and therefore, I have to cook on a daily basis. I usually cook the same things for dinner every week because I know how to cook those things, but it's become very boring and monotenous, so I decided to try some new recipes lately. I've been cooking in my crock pot a lot lately and I have an awesome crock pot recipe book called "Fix it and forget it", I highly recommend it!

I'm also trying to cut back on groceries since the price of groceries has become outrageous, so I started menu planning which is something I've never done. I really think the menu planning is going to cut back on uneccesary spending, so I'm looking forward to seeing the savings:)
I google "recipes" and just look through different recipe sites and pick and choose some recipes I think my family would enjoy then put the grocery items on my list and that's that!
Here's an example of our menu for next week:
Monday-Empanadas and yellow rice
Tuesday-Mushroom chicken and noodles
Wednesday-Picadillo and spanish rice
Thursday-Cheesy Ham and Hash Brown Casserole & Bread
Friday-Baked Bow Ties & Cheese with garlic bread
Saturday-Tater Tot Taco Bake & Salad
